麻辣醬手撕鷄 |
SHREDDED CHICKEN (Moderate Hot and Spicy) |
材料
| Ingredient |
- 鮮鷂一隻約 3 磅 或超級市場熟燒鷄一隻
- 芝麻醬或花生醬 2 湯匙
- 辣椒醬 2 茶匙
- 白酒 3 湯匙
- 日本醋或萍果醋 1 茶匙
- 蜜糖 1 湯匙或白糖 2 茶匙
- 魚露或生抽豉 2 湯匙
- 日本麻油 2 茶匙
- 西生菜半個
- 熟芝麻 2 湯匙

- 1 fresh chicken – or cooked chicken from shop
- 2 Tbsp Sesame sauce or peanut butter
- 2 tsp chili sauce
- 3 Tbsp cooking white wine
- 1 tsp Japanese apple vinegar
- 1 Tbsp honey or 2tsp sugar
- 2 Tbsp fish sauce or soy sauce
- 2 tsp Japanese sesame oil
- ½ head lettuce
- 2 Tbsp cooked/roasted sesame seed

Method |
- 鮮鷄洗淨,切開邊成 2 等份
- 用大型不誘鋼煲堡滾水一大煲,以能蓋過鷄面為合適,把鷄放入煲內,大火滾約 1 分鐘,加蓋再轉小火浸煑 20 分鐘至熟,取出待涼備用. 或蒸鮮鷄 30 分鐘至熟,取出待涼備用
- 西生菜切絲伴碟
- 用手把鷄肉撕出,排放於碟上
- 把材料 2 至 8 拌勻成麻辣醬汁,淋在鷄肉上
- 再洒上熟芝麻,即可享用

- Clean and Cut chicken half.
- Cook chicken in large SS pot; with water above chicken 1”; Boil hi-heat, uncovered, for 1 min.; then boil in lo-heat covered for 20 mins till cooked; remove chicken; cooled; and save for use. OR steam chicken for 30 mins till cooked; cooled and save for use.
- Julian lettuce-plating/garnishing.
- Hand-shred chicken.
- Mix ingredients 2-8-forming hot and spicy sauce-pour on top of shredded chicken.
- Sprinkle sesame seed on chicken; then enjoy.
