麻辣醬手撕鷄

SHREDDED CHICKEN (Moderate Hot and Spicy)

材料

Ingredient

  1. 鮮鷂一隻約 3 磅  或超級市場熟燒鷄一隻
  2. 芝麻醬或花生醬 2 湯匙
  3. 辣椒醬 2 茶匙
  4. 白酒 3 湯匙
  5. 日本醋或萍果醋 1 茶匙
  6. 蜜糖 1 湯匙或白糖 2 茶匙
  7. 魚露或生抽豉 2 湯匙
  8. 日本麻油 2 茶匙
  9. 西生菜半個
  10. 熟芝麻 2 湯匙
  1. 1 fresh chicken – or cooked chicken from shop
  2. 2 Tbsp Sesame sauce or peanut butter
  3. 2 tsp chili sauce
  4. 3 Tbsp cooking white wine
  5. 1 tsp Japanese apple vinegar
  6. 1 Tbsp honey or 2tsp sugar
  7. 2 Tbsp fish sauce or soy sauce
  8. 2 tsp Japanese sesame oil
  9. ½  head lettuce
  10. 2 Tbsp cooked/roasted sesame seed
製法
Method
  1. 鮮鷄洗淨,切開邊成 2 等份
  2. 用大型不誘鋼煲堡滾水一大煲,以能蓋過鷄面為合適,把鷄放入煲內,大火滾約 1 分鐘,加蓋再轉小火浸煑 20 分鐘至熟,取出待涼備用.  或蒸鮮鷄 30 分鐘至熟,取出待涼備用
  3. 西生菜切絲伴碟
  4. 用手把鷄肉撕出,排放於碟上
  5. 把材料 2 至 8 拌勻成麻辣醬汁,淋在鷄肉上
  6. 再洒上熟芝麻,即可享用
  1. Clean and Cut chicken half.
  2. Cook chicken in large SS pot; with water above chicken 1”; Boil hi-heat,  uncovered, for 1 min.;  then boil in lo-heat covered for 20 mins till cooked; remove chicken; cooled; and save for use. OR steam chicken for 30 mins till cooked; cooled and save for use.
  3. Julian lettuce-plating/garnishing.
  4. Hand-shred chicken.
  5. Mix ingredients 2-8-forming hot and spicy sauce-pour on top of shredded chicken.
  6. Sprinkle sesame seed on chicken; then enjoy.
