PEKING DUCK

材料

Ingredient

  1. 燒鴨一隻 - 可於中式超級市場或燒鴨店購買
  2. 青葱一札
  3. 北京填鴨醬或海鮮醬五湯匙
  4. 蒸飽 10 個  可選購超市出售的 country style biscuits 一筒 10 個
  1. 1 cooked duck – available at Chinese super market or Chinese BBQ shop
  2. 1 packet of green onion
  3. 5 Tsp Peking duck(PD) sauce or Hoi Sin(HS) sauce
  4. 10 pieces of stream bun – (Country style biscuits) available at US supermarket 1 roll=10 pcs
製法
Method
  1. 燒鴨切件或用刀片皮片肉 排放上碟
  2. 青葱洗淨,切 2 吋長度或切花形,浸於冰水中約 10 分鐘,瀝乾上碟留用
  3. Country Style Biscuits 放在滾水蒸籠中,大火蒸 10 分鐘,即用
  4. 蒸飽塗上填鴨醬或海鮮醬,夾入青葱,燒鴨皮及鴨肉, 可即享用北京填鴨
  1. Cut duck with sharp knife – skin and meat; arrange nicely on plate.
  2. Clean green onion; cut 2” length wise or cut both ends few times; immerse in water for 10 mins.; dry and save for use.
  3. Steam 10 biscuits with steamer – hi heat for 10 mins. Use immediately.
  4. Steamed biscuits apply with PD or HS sauce with green onion on top; enjoy.
